» Vegetarian July, Week 1

Here is what we had for Vegetarian July, Week 1 (just posting dinners, as breakfast usually is skipped or is a granola bar on the run, and lunches are generally a crapshoot of ramen noodles, leftovers, peanut butter and jelly sandwiches, etc.):

-1 July: Pan-fried tofu with roasted spicy sesame broccoli (a roasted variation of this)


-2 July:  Sun-dried tomato risotto and black beans (um… this was a “CRAP! I FORGOT TO PLAN DINNER” kind of meal and an ODD combo)

-3 July: Black Bean Mexican Pizza

-4 July: Veggie burgers and baked sweet potato “fries”

-5 July: Whole wheat spaghetti with squash and marinara sauce

-6 July: Vegetarian Tortilla Casserole (variation of this)

-7 July: Artichoke, red bell pepper and peas risotto
